Ahhhh, pink cake! If you grew up in San Antonio, Texas or any city with a predominant influence of Mexican heritage, you know about pink cake (cortadillos). For this blogger, this delectable mound of sugar glory calls to mind childhood memories of joy and celebration while sometimes evoking memories of adulthood events that necessitated some edible comfort. In either instance there was my friend…Pink Cake.
Depending on the where it was bought (and on what day) the cake part could be flaky and dry or soft and moist. I quickly found out at a young age that the softer the cake the better it was because then I didn’t have to dislocate my jaw to get a good mordida (that’s a bite for my Spanish-challenged friends). The frosting had its own qualities as well — it could be hard and crunchy or creamy and smooth. The frosting is where the magic happens, though, because it defines the overall taste. If made correctly that sweet strawberry taste and smell will float up into your sinuses and fill your head with epicurean delight. It should melt on your tongue and delicately dance with your taste buds without skipping a beat. It does bear to be said, however, that there should never be a crunch to the frosting. If anyone ruins pink cake frosting with sprinkles — ANY kind of sprinkles — then they should be prosecuted to the full extent of Abuela Chancla Law (ACL). No one argues with abuela!
Now that we all remember that first time our abuelas got mad at us and we felt the sting of a perfectly hurled plastic soled house slipper or sandal, let’s now put this blog into perspective. Though inspired by the thought that “not all pink cake is the same”, it won’t exclusively be about pink cake but rather those things that we remember/experienced differently from childhood to adulthood. These things (these pink cakes) are what make us who we are today.
So, let’s all sit down with some cafe de olla, our favorite piece of pink cake, and enjoy ourselves.
